Estimated Time to Make: 35 minutes

Ingredients:

  • 2 large sweet potatoes, sliced into rounds
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh cilantro
  • Optional toppings: sliced jalapeños, diced avocado, sour cream, salsa

Cooking Equipment Needed:

  • Baking sheet
  • Parchment paper or silicone baking mat
  • Mixing bowl
  • Chef’s knife and cutting board
  • Spatula

Instructions:

1. Preheat the oven:

Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat and set it aside.

2. Prepare the sweet potatoes:

Wash the sweet potatoes and slice them into rounds, about 1/4 inch thick. In a mixing bowl, toss the sweet potato slices with olive oil, chili powder, cumin, salt, and pepper until evenly coated.

3. Arrange on the baking sheet:

Arrange the seasoned sweet potato slices in a single layer on the prepared baking sheet. Make sure they’re not overlapping to ensure even cooking.

4. Bake the sweet potatoes:

Place the baking sheet in the preheated oven and bake the sweet potato slices for 20-25 minutes, or until they’re golden brown and crispy, flipping halfway through the cooking time.

5. Assemble the nachos:

Once the sweet potatoes are cooked to perfection, remove them from the oven and sprinkle them with black beans and shredded cheddar cheese. Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

6. Add toppings and serve:

Remove the loaded sweet potato nachos from the oven and top them with diced tomatoes, sliced black olives, chopped cilantro, and any other desired toppings. Serve immediately with optional toppings like sliced jalapeños, diced avocado, sour cream, and salsa.

Tips:

  • Feel free to customize your loaded sweet potato nachos with your favorite toppings. Get creative and add ingredients like diced bell peppers, red onion, corn, or shredded chicken for extra flavor.
  • For a vegan version, simply omit the cheese or use dairy-free cheese alternatives.
  • Make sure to keep an eye on the sweet potato slices while baking to prevent them from burning. Adjust the cooking time as needed based on your oven’s temperature and the thickness of the sweet potato slices.
